INGREDIENTS
3 small Cotechini from Salumificio Marchisio
1 cup of thick tomato sauce
1 carrot
2 garlic cloves
4 walnuts
4 juniper berries
4 cloves
1 glass red wine
Olive oil, salt and pepper
METHOD
- Prick Marchisio cotechini with a fork and boil them for few minutes in hot water.
- Mince the carrot with garlic and walnuts, add juniper berries and cloves and fry over low heat with some olive oil.
- Peel cotechini and add them in the saucepan, fry them for a few minutes then squash them to pieces with a fork.
- Simmer with red wine and cook for some minutes.
- Add tomato sauce, stir from time to time and cook over low heat.
- Taste the sauce and add salt and pepper if needed, continue cooking the sauce until almost thick: the more it cooks the more it gains fragrance and taste.
- Prepare tagliolini (a kind of fresh pasta) or another pasta you like and mix it with the sauce you just made.
