Roastbeef with Cous-cous

INGREDIENTS
Marchisio roast beef, two slices for each person
Cous Cous: one handful for each person
Tomatoes cut in pieces
Fresh thyme, chopped
Salted water
Salt and pepper to taste

For the sauce
Whole milk yogurt: 1 cup
Mustard: one teaspoon
1 teaspoon chopped spring onion
Salt and pepper

METHOD
1.Boil the water with little salt, when ready put a tablespoon of olive oil in it.
2.Put the cous cous in a bowl and cover with the hot water. Let the cous cous absorb the water, then add other water one bit at a time. Taste the cous cous to see if it’s ready and eventually add water/salt.
3.Mix the cous cous with a fork and add the tomatoes: you can dress the tomatoes as you like or replace it with other vegetables of your choosing.
4.In a cup mix all the ingredients for the sauce, than taste it to adjust the flavours.
Serve Marchisio Roast beef with some yogurt sauce on top and the cous cous on a side.
